Santuario Sul: A Haven for Coffee Innovation
Owned by Luis Paulo Dias, Santuario Sul Farm spans 120 hectares, with 58 hectares dedicated to coffee production. This farm is a sanctuary for exotic coffee varieties, including Geisha, Sudan Rume, SL28, Yirgacheffe, Laurina, Yellow Bourbon, and many others.
The dedication of Luiz Paulo and his partners is evident in the diverse range of over 30 exotic coffee varieties grown here. The farm employs innovative cultivation practices, such as shade planting and the New Flavors process, which contribute to the unique and exceptional taste of their coffees.
Meticulous Processing for Superior Quality
After mechanical picking, the coffee cherries are carefully placed in water to float and remove any low-density or defective cherries. The selected cherries are then transported to barrels for a meticulous 72-hour fermentation process. Following fermentation, the cherries are spread out on raised beds to dry for 22 to 24 days until they reach the optimal moisture level.
