What makes this coffee extraordinary?

Jairo didn't just grow this coffee; he crafted an experience. After carefully selecting his Castillo cherries at peak ripeness, he introduced them to a 48-hour anaerobic fermentation—think of it like the oxygen-free environment used in fine winemaking. But here's where it gets exciting: he added passion fruit pulp and wine yeast to the mix, creating a controlled fermentation that develops those incredible tropical notes you'll taste in every sip.

This isn't experimentation for its own sake. It's a master producer using cutting-edge techniques to unlock flavours that were always there, waiting to be discovered.

The Story Behind the Cup

High in the mountains of Armenia, Quindío (1450-1500m), Jairo Arcila tends his Santa Mónica farm where volcanic ash soils and perfect temperature ranges create ideal conditions for exceptional coffee. The Castillo variety—developed specifically for Colombian conditions—provides natural resistance to coffee leaf rust while delivering the complex flavour potential that makes this processing method possible.

After fermentation, each bean is gently washed and carefully dried on raised beds, with temperatures never exceeding 35°C to preserve those delicate flavours that make this coffee sing.
